Method
- Load smoker with hickory wood and preheat to a medium low setting
- Slice butternut squash in half lengthwise and scoop out the seeds.
- Place a generous pat of butter in the hole where the seeds were.
- Sprinkle with brown sugar
- Place squash in smoker cage or on smoker shelves (depending on your smoker) Cook until desired firmness (about 30-60 minutes)
- Scoop out butternut squash into a serving bowl and discard the shell/skin
