  • 2 large butternut squash
  • 4 cubes butter about 1/4 or 1/8 of a stick
  • 1/2 cup brown sugar


  • Load smoker with hickory wood and preheat to a medium low setting
  • Slice butternut squash in half lengthwise and scoop out the seeds. 
  • Place a generous pat of butter in the hole where the seeds were. 
  • Sprinkle with brown sugar
  • Place squash in smoker cage or on smoker shelves (depending on your smoker) Cook until desired firmness (about 30-60 minutes)
  • Scoop out butternut squash into a serving bowl and discard the shell/skin
